- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 cup dill pickle juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/2 cup dill pickles, finely chopped
- 1/4 cup ranch seasoning mix
- 1/4 cup almond flour (optional for texture)
- 1 tablespoon fresh dill, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the shredded cheddar cheese and softened cream cheese. Mix until well blended.
- Add the dill pickle juice, garlic powder, onion powder, and black pepper to the cheese mixture. Stir until fully incorporated.
- Fold in the finely chopped dill pickles, ranch seasoning mix, and almond flour (if using). Mix until everything is evenly distributed.
- Using a tablespoon, scoop out the mixture and form small balls or bites. Place them on the prepared baking sheet, leaving space between each one.
- Bake in the preheated oven for 15-20 minutes, or until the cheese bites are golden brown and slightly firm to the touch.
- Allow the cheese bites to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
Notes
- For a spicier kick, add a pinch of cayenne pepper or some chopped jalapeños to the mixture.
- These cheese bites can be stored in an airtight container in the refrigerator for up to a week, making them a great make-ahead snack.
