Ingredients

  • 6 large hard-boiled eggs, peeled and chopped

  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup chopped green onions
  • 1/4 cup diced pickles (optional)

Instructions

  1. Cook the konjac noodles according to package instructions, then drain and rinse under cold water. Set aside to cool.
  2. In a large mixing bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Add the cooled konjac noodles to the egg mixture and gently fold until the noodles are evenly coated.
