A unique and delicious recipe for deviled duck eggs made with beef tallow mayo.

- 6 duck eggs
- 1/4 cup beef tallow, melted
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Paprika for garnish
- Chives, finely chopped, for garnish
Instructions
- Place the duck eggs in a pot and cover them with cold water. Bring to a boil over medium heat.
- Once boiling, cover the pot, remove it from heat, and let the eggs sit for 12 minutes.
- After 12 minutes, transfer the eggs to an ice bath to cool for about 10 minutes.
- Peel the cooled duck eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.
- To the yolks, add the melted beef tallow, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper. Mash until smooth and creamy.
- Spoon or pipe the yolk mixture back into the egg whites.
- Sprinkle with paprika and garnish with chopped chives before serving.
Notes
- For a spicy kick, add a dash of hot sauce to the yolk mixture.
- Try substituting the beef tallow with avocado oil for a lighter version.
