Description

A unique and delicious recipe for deviled duck eggs made with beef tallow mayo.


Ingredients

  • 6 duck eggs
  • 1/4 cup beef tallow, melted
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Paprika for garnish
  • Chives, finely chopped, for garnish

Instructions

  1. Place the duck eggs in a pot and cover them with cold water. Bring to a boil over medium heat.
  2. Once boiling, cover the pot, remove it from heat, and let the eggs sit for 12 minutes.
  3. After 12 minutes, transfer the eggs to an ice bath to cool for about 10 minutes.
  4. Peel the cooled duck eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.
  5. To the yolks, add the melted beef tallow, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper. Mash until smooth and creamy.
  6. Spoon or pipe the yolk mixture back into the egg whites.
  7. Sprinkle with paprika and garnish with chopped chives before serving.

Notes

  • For a spicy kick, add a dash of hot sauce to the yolk mixture.
  • Try substituting the beef tallow with avocado oil for a lighter version.
