  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons pandan extract
  • 1/4 cup shredded sweetened coconut
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a madeleine pan with butter or non-stick spray.
  2. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In a large bowl, mix the melted butter and granulated sugar until smooth.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla and pandan extracts.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  6. Gently fold in the shredded coconut until evenly distributed.
