- 1/2 cup unsalted butter, melted and slightly cooled
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons pandan extract
- 1/4 cup shredded sweetened coconut
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a madeleine pan with butter or non-stick spray.
- In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
- In a large bowl, mix the melted butter and granulated sugar until smooth.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla and pandan extracts.
- Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
- Gently fold in the shredded coconut until evenly distributed.
- Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers spring back when lightly touched.
- Remove from the oven and let cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar before serving, if desired.

- For a more intense pandan flavor, increase the pandan extract to 3 tablespoons.
