Description

Ingredients

  • 1 ½ cups almond flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup granulated erythritol (or preferred keto sweetener)
  • ½ cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened almond milk
  • For the ganache: ½ cup heavy cream
  • 4 ounces sugar-free dark chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan and line the bottom with parchment paper for easy removal.
  3. In a medium bowl, whisk together the almond flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  4. In a large mixing bowl, cream together the softened butter and erythritol until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract.
  7. Gradually add the dry ingredients to the wet mixture, alternating with the almond milk. Mix until just combined and smooth.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  11. For the ganache, heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
  12. Remove from heat and add the chopped sugar-free dark chocolate. Let it sit for a minute, then stir until smooth and glossy.
  13. Once the cake is completely cool, drizzle the ganache over the top.
  14. Slice and serve.

Notes

  • For a richer flavor, try adding a teaspoon of instant coffee granules to the batter.
  • You can substitute the almond flour with a blend of coconut flour and additional eggs, but be cautious with the measurements as coconut flour absorbs more moisture.
