- 1 ½ cups almond flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup granulated erythritol (or preferred keto sweetener)
- ½ cup unsalted butter, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- ½ cup unsweetened almond milk
- For the ganache: ½ cup heavy cream
- 4 ounces sugar-free dark chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan and line the bottom with parchment paper for easy removal.
- In a medium bowl, whisk together the almond flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and erythritol until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the almond milk. Mix until just combined and smooth.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- For the ganache, heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
- Remove from heat and add the chopped sugar-free dark chocolate. Let it sit for a minute, then stir until smooth and glossy.
- Once the cake is completely cool, drizzle the ganache over the top.
- Slice and serve.
Notes
- For a richer flavor, try adding a teaspoon of instant coffee granules to the batter.
- You can substitute the almond flour with a blend of coconut flour and additional eggs, but be cautious with the measurements as coconut flour absorbs more moisture.
