- 1 cup dark chocolate chips (at least 70% cocoa)
- 1/2 cup extra virgin olive oil
- 3/4 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract

- 1/2 teaspoon baking powder
- 2 ripe pears, peeled, cored, and sliced
- 1 tablespoon unsalted butter
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F. Grease an 8-inch round cake pan and line the bottom with parchment paper.
- In a microwave-safe bowl, combine the dark chocolate chips and olive oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- In a large mixing bowl, whisk together the sugar, eggs, and vanilla extract until well combined. Gradually add the melted chocolate mixture, stirring until smooth.
- Sift in the cocoa powder, salt, and baking powder. Gently fold the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- While the cake is cooling, prepare the spiced pears. In a skillet over medium heat, melt the butter. Add the sliced pears, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the pears are tender and caramelized.
- To serve, slice the cake and top each piece with the spiced pears.
Notes
- For a nutty flavor, add 1/2 cup of finely chopped walnuts or almonds to the batter before baking.
- Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent dessert.
