Ingredients

  • 3/4 cup granulated sugar
  • 3 large eggs

  • 1/2 teaspoon baking powder
  • 2 ripe pears, peeled, cored, and sliced
  • 1 tablespoon unsalted butter
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F. Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. In a microwave-safe bowl, combine the dark chocolate chips and olive oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  3. In a large mixing bowl, whisk together the sugar, eggs, and vanilla extract until well combined. Gradually add the melted chocolate mixture, stirring until smooth.
  4. Sift in the cocoa powder, salt, and baking powder. Gently fold the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  6. While the cake is cooling, prepare the spiced pears. In a skillet over medium heat, melt the butter. Add the sliced pears, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the pears are tender and caramelized.
  7. To serve, slice the cake and top each piece with the spiced pears.
