- 1/4 cup unsalted butter, softened
- 1/4 cup powdered erythritol (or your preferred keto sweetener)
- 1 tablespoon brewed coffee (cooled)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, combine almond flour, cocoa powder, baking powder, salt, and granulated erythritol. Mix well.
- In another bowl, whisk together melted butter, eggs, vanilla extract, and cooled brewed coffee until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Spread the brownie batter evenly in the prepared baking pan.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean. Let the brownies cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- While the brownies are cooling, prepare the frosting. In a mixing bowl, beat together cocoa powder, cream cheese, softened butter, powdered erythritol, cooled brewed coffee, and vanilla extract until smooth and creamy.
- Once the brownies are completely cooled, spread the creamy mocha frosting evenly over the top.
- Cut into squares and serve.
