  • 1/4 cup unsweetened cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/4 cup powdered erythritol (or your preferred keto sweetener)
  • 1 tablespoon brewed coffee (cooled)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, combine almond flour, cocoa powder, baking powder, salt, and granulated erythritol. Mix well.
  3. In another bowl, whisk together melted butter, eggs, vanilla extract, and cooled brewed coffee until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Spread the brownie batter evenly in the prepared baking pan.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean. Let the brownies cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  7. While the brownies are cooling, prepare the frosting. In a mixing bowl, beat together cocoa powder, cream cheese, softened butter, powdered erythritol, cooled brewed coffee, and vanilla extract until smooth and creamy.
  8. Once the brownies are completely cooled, spread the creamy mocha frosting evenly over the top.
  9. Cut into squares and serve.
