- 1 cup semolina
- 1 cup plain yogurt
- 1 cup sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup pitted dates, chopped
- 1/2 cup slivered almonds (for topping)
- 1/2 cup water
- 1/2 cup sugar (for syrup)
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan with butter or cooking spray.
- In a large mixing bowl, combine the semolina, yogurt, sugar, melted butter, baking powder, baking soda, salt, and vanilla extract. Mix until well combined.
- Gently fold in the chopped dates until evenly distributed throughout the batter.
- Pour the batter into the prepared baking pan and smooth the top with a spatula. Sprinkle slivered almonds on top.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the syrup. In a small saucepan, combine the water, sugar, and lemon juice. Bring to a boil, then reduce heat and let simmer for about 10 minutes until slightly thickened. Remove from heat and let cool.
- Once the cake is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot cake. Allow the cake to absorb the syrup for at least 30 minutes before cutting into squares.
Notes
- For added flavor, consider incorporating a teaspoon of ground cardamom or cinnamon into the batter.
- You can substitute the dates with other dried fruits like apricots or raisins for a different taste.
