Delicious and healthy Dark Chocolate Sea Salt Almond Butter Keto Cups that are easy to make and perfect for a keto diet.


Ingredients

Scale
  • 1 cup almond butter, unsweetened
  • 1 cup dark chocolate chips (at least 70% cocoa)
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 cup unsweetened shredded coconut (optional)

Instructions

  1. Line a muffin tin with paper liners or silicone molds.
  2. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  3. Spoon about 1 tablespoon of the melted chocolate into the bottom of each muffin liner. Use the back of a spoon to spread it evenly across the bottom. Place the muffin tin in the freezer for about 10 minutes to set.
  4. While the chocolate is setting, mix the almond butter, vanilla extract, and sea salt in a separate bowl until well combined.
  5. Remove the muffin tin from the freezer and add about 1 tablespoon of the almond butter mixture on top of the set chocolate in each cup. Spread it gently to create an even layer.
  6. Pour the remaining melted chocolate over the almond butter layer, covering it completely. Sprinkle a pinch of sea salt and shredded coconut on top, if using.
  7. Return the muffin tin to the freezer for another 15-20 minutes, or until fully set.
  8. Once set, carefully remove the cups from the muffin tin and store them in an airtight container in the refrigerator.

Notes

  • For a different flavor, try using peanut butter instead of almond butter.
  • Add a teaspoon of your favorite sweetener to the almond butter mixture for extra sweetness, if desired.
