Delicious and healthy Dark Chocolate Sea Salt Almond Butter Keto Cups that are easy to make and perfect for a keto diet.

- 1 cup almond butter, unsweetened
- 1 cup dark chocolate chips (at least 70% cocoa)
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1/4 cup unsweetened shredded coconut (optional)
Instructions
- Line a muffin tin with paper liners or silicone molds.
- In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Spoon about 1 tablespoon of the melted chocolate into the bottom of each muffin liner. Use the back of a spoon to spread it evenly across the bottom. Place the muffin tin in the freezer for about 10 minutes to set.
- While the chocolate is setting, mix the almond butter, vanilla extract, and sea salt in a separate bowl until well combined.
- Remove the muffin tin from the freezer and add about 1 tablespoon of the almond butter mixture on top of the set chocolate in each cup. Spread it gently to create an even layer.
- Pour the remaining melted chocolate over the almond butter layer, covering it completely. Sprinkle a pinch of sea salt and shredded coconut on top, if using.
- Return the muffin tin to the freezer for another 15-20 minutes, or until fully set.
- Once set, carefully remove the cups from the muffin tin and store them in an airtight container in the refrigerator.
Notes
- For a different flavor, try using peanut butter instead of almond butter.
- Add a teaspoon of your favorite sweetener to the almond butter mixture for extra sweetness, if desired.
