Savory Beef Stew with Creamy Sauce and Fluffy Dumplings

- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon paprika
- 1 teaspoon caraway seeds
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- 2 tablespoons fresh parsley, chopped (for garnish)
- For the dumplings:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the finely chopped onion and sauté until soft and translucent, about 5 minutes.
- Incorporate the minced garlic and sauté for another minute.
- Add the beef cubes to the pot and brown them evenly on all sides, about 8-10 minutes.
- Sprinkle the paprika, caraway seeds, salt, and black pepper over the beef.
- Pour in the beef broth and bring to a gentle simmer.
- Cover the pot and cook on low heat for approximately 1.5 to 2 hours, or until the beef is fork-tender.
- In a separate bowl, whisk together the sour cream and flour until smooth.
- Gradually add this mixture to the pot, stirring well to combine and thicken the sauce.
- Allow it to simmer for an additional 10 minutes on low heat, stirring occasionally.
- While the beef is cooking, prepare the dumplings by combining flour, baking powder, and salt in a mixing bowl.
- In another bowl, whisk the milk and egg together, then pour into the dry ingredients, mixing until a soft dough forms.
- Bring a large pot of salted water to a rolling boil and drop spoonfuls of the dumpling dough into the boiling water.
- Cook for about 10-12 minutes, or until the dumplings rise to the surface and are fully cooked.
- Use a slotted spoon to remove the dumplings and set aside.
- Ladle the beef stew over the dumplings and garnish with freshly chopped parsley.
