Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • For the dumplings:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the finely chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Incorporate the minced garlic and sauté for another minute.
  4. Add the beef cubes to the pot and brown them evenly on all sides, about 8-10 minutes.
  5. Sprinkle the paprika, caraway seeds, salt, and black pepper over the beef.
  6. Pour in the beef broth and bring to a gentle simmer.
  7. Cover the pot and cook on low heat for approximately 1.5 to 2 hours, or until the beef is fork-tender.
  8. In a separate bowl, whisk together the sour cream and flour until smooth.
  9. Gradually add this mixture to the pot, stirring well to combine and thicken the sauce.
  10. Allow it to simmer for an additional 10 minutes on low heat, stirring occasionally.
  11. While the beef is cooking, prepare the dumplings by combining flour, baking powder, and salt in a mixing bowl.
  12. In another bowl, whisk the milk and egg together, then pour into the dry ingredients, mixing until a soft dough forms.
  13. Bring a large pot of salted water to a rolling boil and drop spoonfuls of the dumpling dough into the boiling water.
  14. Cook for about 10-12 minutes, or until the dumplings rise to the surface and are fully cooked.
  15. Use a slotted spoon to remove the dumplings and set aside.
  16. Ladle the beef stew over the dumplings and garnish with freshly chopped parsley.
