Description
A refreshing dish of cucumber noodles topped with a creamy roasted garlic yogurt sauce.
Ingredients

- 2 large cucumbers
- 1 cup plain Greek yogurt
- 1 head of garlic
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
Instructions
- Preheat the oven to 400°F.
- Cut the top off the head of garlic, drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for about 30-35 minutes until soft.
- While the garlic is roasting, use a spiralizer or vegetable peeler to create noodles from the cucumbers.
- Place the cucumber noodles in a colander, sprinkle with salt, and let them sit for about 15 minutes to draw out excess moisture.
- In a bowl, combine the Greek yogurt, lemon juice, black pepper, dill, and parsley.
- Once the garlic is roasted and cool enough to handle, squeeze the cloves out of their skins and mix them into the yogurt sauce until smooth.
- Rinse the cucumber noodles under cold water to remove excess salt and pat them dry with paper towels.
- Toss the noodles with the remaining tablespoon of olive oil.
- Serve the cucumber noodles topped with the roasted garlic yogurt sauce. Enjoy immediately or chill for 15-30 minutes for a refreshing dish.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the yogurt sauce.
- Try adding cherry tomatoes or bell peppers for extra color and flavor.
