Cucumber Noodles with Roasted Garlic Yogurt Sauce Delight!

Description

A refreshing dish of cucumber noodles topped with a creamy roasted garlic yogurt sauce.


Ingredients

  • 2 large cucumbers
  • 1 cup plain Greek yogurt
  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the top off the head of garlic, drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for about 30-35 minutes until soft.
  3. While the garlic is roasting, use a spiralizer or vegetable peeler to create noodles from the cucumbers.
  4. Place the cucumber noodles in a colander, sprinkle with salt, and let them sit for about 15 minutes to draw out excess moisture.
  5. In a bowl, combine the Greek yogurt, lemon juice, black pepper, dill, and parsley.
  6. Once the garlic is roasted and cool enough to handle, squeeze the cloves out of their skins and mix them into the yogurt sauce until smooth.
  7. Rinse the cucumber noodles under cold water to remove excess salt and pat them dry with paper towels.
  8. Toss the noodles with the remaining tablespoon of olive oil.
  9. Serve the cucumber noodles topped with the roasted garlic yogurt sauce. Enjoy immediately or chill for 15-30 minutes for a refreshing dish.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the yogurt sauce.
  • Try adding cherry tomatoes or bell peppers for extra color and flavor.
