- 1 cup cottage cheese
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup cherry tomatoes, halved
- 1/4 cup bell pepper, finely diced
- Whole grain or spinach tortillas (optional)
Instructions
- Slice the cucumber into long strips, about 1/4 inch thick. If the cucumber is large, you can cut it in half lengthwise first.
- In a medium bowl, combine the cottage cheese, dill, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
- Lay the cucumber strips flat on a clean surface. If using tortillas, spread a thin layer of the cottage cheese mixture on each tortilla before placing cucumber strips on top.
- Spoon a small amount of the cottage cheese mixture onto each cucumber strip and top with cherry tomatoes and bell peppers.
- Roll the cucumber strips tightly or fold the tortillas over the filling. Secure with toothpicks if necessary.
- Serve immediately or chill in the refrigerator for 15-30 minutes for a refreshing snack.
