- 6 large eggs
- 1 cup whole milk
- 1 cup shredded Swiss cheese
- 1 cup fresh spinach, chopped
- 1/2 cup diced onion
- 1/2 cup diced bell pepper (any color)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish or quiche pan with cooking spray or a little olive oil.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes.
- Add the chopped spinach to the skillet and cook for another 2-3 minutes until wilted. Remove from heat and let cool slightly.
- In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, salt, black pepper, and nutmeg until well combined.
- Stir in the sautéed vegetables and shredded Swiss cheese into the egg mixture. If using, add the grated Parmesan cheese as well.
- Pour the mixture into the prepared pie dish, spreading it evenly.
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. A toothpick inserted in the center should come out clean.
- Allow the quiche to cool for about 10 minutes before slicing and serving.
Notes
- For added flavor, consider mixing in some cooked bacon or ham.
- Swap out the spinach for other vegetables like mushrooms, zucchini, or kale for a different twist.
