  • 2 large eggs
  • ¼ cup unsweetened almond milk
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • For the crumb topping:
  • ¼ cup almond flour
  • 2 tablespoons erythritol
  • 2 tablespoons melted coconut oil
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, combine almond flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk together eggs, almond milk, melted coconut oil, vanilla extract, and ground cinnamon.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.
  6. In a separate bowl, mix the crumb topping ingredients until crumbly.
  7. Sprinkle the topping evenly over the donut batter.
  8. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes
