  • 8 large eggs
  • 1/2 cup heavy cream
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup grated mozzarella cheese
  • 8 slices crispy bacon or breakfast sausage links
  • 1 ripe avocado, cut into wedges
  • Handful of fresh arugula or baby spinach (optional)

Instructions

  1. Begin by preheating your oven to 375°F (190°C).
  2. In a mixing bowl, combine the eggs, heavy cream, sea salt, and black pepper. Whisk until the mixture is smooth and frothy.
  3. Heat a large skillet over medium-low heat. Pour the egg mixture into the skillet and cook gently, stirring occasionally, until the eggs are fluffy and just set. Remove from heat and set aside.
  4. Cut each croissant in half lengthwise and arrange the bottom halves on a baking sheet.
  5. Spoon the fluffy scrambled eggs evenly onto the croissant bottoms. Layer on the mozzarella cheese, followed by the crispy bacon or sausage, avocado wedges, and a sprinkle of arugula or spinach if desired.
  6. Cap each sandwich with the top half of the croissants. Bake in the oven for about 12 minutes, or until the croissants are golden and the cheese is bubbling.
  7. Take them out of the oven, allow to cool for a minute, and enjoy while warm.

Notes

  • For a meatless version, swap the bacon or sausage with sautéed zucchini and bell peppers.
