- 4 buttery croissants
- 8 large eggs
- 1/2 cup heavy cream
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup grated mozzarella cheese
- 8 slices crispy bacon or breakfast sausage links
- 1 ripe avocado, cut into wedges
- Handful of fresh arugula or baby spinach (optional)
Instructions
- Begin by preheating your oven to 375°F (190°C).
- In a mixing bowl, combine the eggs, heavy cream, sea salt, and black pepper. Whisk until the mixture is smooth and frothy.
- Heat a large skillet over medium-low heat. Pour the egg mixture into the skillet and cook gently, stirring occasionally, until the eggs are fluffy and just set. Remove from heat and set aside.
- Cut each croissant in half lengthwise and arrange the bottom halves on a baking sheet.
- Spoon the fluffy scrambled eggs evenly onto the croissant bottoms. Layer on the mozzarella cheese, followed by the crispy bacon or sausage, avocado wedges, and a sprinkle of arugula or spinach if desired.
- Cap each sandwich with the top half of the croissants. Bake in the oven for about 12 minutes, or until the croissants are golden and the cheese is bubbling.
- Take them out of the oven, allow to cool for a minute, and enjoy while warm.
Notes
- For a meatless version, swap the bacon or sausage with sautéed zucchini and bell peppers.
- Enhance the flavor with a slice of heirloom tomato or a spoonful of your favorite hot sauce.
