- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup feta cheese, crumbled
- 1/4 cup parsley, chopped
- 1 egg
- 2 cloves garlic, minced
- 1 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can (15 oz) crushed tomatoes
- 1 cup orzo pasta
- 1 cup chicken broth
- 1/2 cup heavy cream
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place the meatballs in the crockpot.
- In a separate bowl, mix crushed tomatoes and chicken broth. Pour over the meatballs in the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the orzo and heavy cream. Cover and cook until the orzo is tender.
- Serve warm, garnished with additional parsley if desired.
