A simple and delicious recipe for making chicken tacos in a crockpot.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 8 small tortillas
  • 1 cup shredded cheese
  • Optional toppings: sour cream, avocado, cilantro

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Sprinkle the taco seasoning over the chicken.
  3. Add the salsa, black beans, and corn to the crockpot.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and mix it with the other ingredients.
  6. Serve the chicken mixture in tortillas and top with cheese and optional toppings.

Notes

  • For extra flavor, marinate the chicken in the taco seasoning and salsa overnight.
  • Feel free to add other vegetables like bell peppers or onions.
