Description
A simple and delicious recipe for glazed baby carrots cooked in a Crock Pot.
Ingredients
Scale
- 2 pounds baby carrots, peeled
- 1/2 cup packed brown sugar
- 1/4 cup unsalted butter, melted
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup honey
- 1/2 cup water
Instructions
- Begin by melting the butter in a small saucepan over low heat.
- Once melted, remove from heat and whisk in the brown sugar, honey, ground cinnamon, salt, and black pepper until the mixture is smooth and well combined.
- In a large mixing bowl, add the peeled baby carrots and pour the buttery mixture over them.
- Toss the carrots gently until they are fully coated in the glaze.
- Pour the carrots into the Crock Pot, ensuring they are spread out evenly.
- Add the water to the pot, cover, and set it to cook on low for 4 to 5 hours, or until the carrots reach a tender consistency.
- About halfway through the cooking time, give the carrots a gentle stir to redistribute the glaze.
- Once they are cooked to perfection, serve the warm glazed carrots as a delightful side dish.
Notes
- For an added burst of flavor, incorporate the zest of one lemon into the glaze before cooking.
- For a crunchy texture, consider adding a handful of toasted almonds or pecans during the last 30 minutes of cooking.
