Savory Beef Stew with Gnocchi Delight


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup red wine
  • 1 cup canned crushed tomatoes
  • 1/4 cup brown sugar
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 pound potato gnocchi
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the beef cubes and sear them until they develop a rich brown crust on all sides.
  3. Remove the beef from the pot and set it aside.
  4. In the same pot, add the chopped onion and sauté until it softens and turns translucent, about 5 minutes.
  5. Add the minced garlic and cook for another minute.
  6. Return the browned beef to the pot and pour in the beef broth and red wine, scraping up any flavorful bits stuck to the bottom.
  7. Stir in the crushed tomatoes, brown sugar, balsamic vinegar, thyme, paprika, and season with salt and pepper.
  8. Bring the mixture to a gentle simmer, then lower the heat, cover the pot, and let it cook for 1.5 to 2 hours until the beef is fork-tender.
  9. While the beef stew simmers, prepare the gnocchi according to the package directions.
  10. Once cooked, drain the gnocchi and set them aside.
  11. When the beef is tender, taste the sauce and adjust the seasoning if needed.
  12. Serve the hearty beef stew over a generous portion of gnocchi and finish with a sprinkle of fresh parsley.
