Savory Beef Stew with Gnocchi Delight
Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup red wine
- 1 cup canned crushed tomatoes
- 1/4 cup brown sugar
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 pound potato gnocchi
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium-high heat.
- Add the beef cubes and sear them until they develop a rich brown crust on all sides.
- Remove the beef from the pot and set it aside.
- In the same pot, add the chopped onion and sauté until it softens and turns translucent, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Return the browned beef to the pot and pour in the beef broth and red wine, scraping up any flavorful bits stuck to the bottom.
- Stir in the crushed tomatoes, brown sugar, balsamic vinegar, thyme, paprika, and season with salt and pepper.
- Bring the mixture to a gentle simmer, then lower the heat, cover the pot, and let it cook for 1.5 to 2 hours until the beef is fork-tender.
- While the beef stew simmers, prepare the gnocchi according to the package directions.
- Once cooked, drain the gnocchi and set them aside.
- When the beef is tender, taste the sauce and adjust the seasoning if needed.
- Serve the hearty beef stew over a generous portion of gnocchi and finish with a sprinkle of fresh parsley.
