A delicious and comforting Crispy Skin Congee recipe that combines jasmine rice with chicken broth and topped with crispy skin.

- 1 cup jasmine rice
- 8 cups chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon ginger, minced
- 1 teaspoon garlic, minced
- 1/2 teaspoon white pepper
- 2 green onions, sliced
- 1/2 cup cooked chicken, shredded (optional)
- 1/2 cup crispy skin (from roasted chicken or pork)
- Salt to taste
Instructions
- In a large pot, rinse the jasmine rice under cold water until the water runs clear. Drain well.
- Add the rinsed rice and chicken broth to the pot.
- Bring to a boil over medium-high heat, then reduce the heat to low.
- Cover the pot and simmer for about 1 hour, stirring occasionally, until the rice is soft and the congee has thickened to your desired consistency.
- Stir in the soy sauce, sesame oil, minced ginger, minced garlic, white pepper, and salt to taste.
- If using, add the shredded chicken and mix well.
- Ladle the congee into bowls and top with crispy skin and sliced green onions.
- Serve hot, and enjoy your delicious congee!
Notes
- For a creamier texture, let the congee simmer longer and stir more frequently.
- You can also add a soft-boiled egg on top for extra richness.
- For a vegetarian version, substitute chicken broth with vegetable broth and omit the chicken and crispy skin.
