Ingredients

  • 1 cup jasmine rice
  • 8 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, minced
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon white pepper
  • 2 green onions, sliced
  • 1/2 cup cooked chicken, shredded (optional)
  • 1/2 cup crispy skin (from roasted chicken or pork)
  • Salt to taste

Instructions

  1. In a large pot, rinse the jasmine rice under cold water until the water runs clear. Drain well.
  2. Add the rinsed rice and chicken broth to the pot.
  3. Bring to a boil over medium-high heat, then reduce the heat to low.
  4. Cover the pot and simmer for about 1 hour, stirring occasionally, until the rice is soft and the congee has thickened to your desired consistency.
  5. Stir in the soy sauce, sesame oil, minced ginger, minced garlic, white pepper, and salt to taste.
  6. If using, add the shredded chicken and mix well.
  7. Ladle the congee into bowls and top with crispy skin and sliced green onions.
  8. Serve hot, and enjoy your delicious congee!

  • For a creamier texture, let the congee simmer longer and stir more frequently.
