Crispy Seafood Egg Rolls are a delicious appetizer filled with shrimp, imitation crab, and fresh vegetables, perfect for any occasion.

- 1 cup cooked shrimp, chopped
- 1 cup imitation crab meat, shredded
- 1 cup coleslaw mix (cabbage and carrots)
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 package spring roll wrappers (about 20 wrappers)
- Vegetable oil for frying
Instructions
- In a large mixing bowl, combine the chopped shrimp, imitation crab meat, coleslaw mix, green onions, garlic, ginger, soy sauce, and sesame oil. Mix well until all ingredients are evenly combined.
- Lay a spring roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the seafood mixture in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a little water on the edges to help seal the wrapper.
- Repeat with the remaining wrappers and filling.
- In a large skillet or deep fryer, heat about 2 inches of vegetable oil over medium heat until hot (about 350°F).
- Carefully add a few egg rolls at a time, frying until golden brown and crispy, about 3-4 minutes per side.
- Remove and drain on paper towels.
- Serve hot with sweet chili sauce or soy sauce for dipping.
Notes
- For a spicier kick, add a teaspoon of sriracha or red pepper flakes to the seafood mixture.
- Try adding other vegetables like bell peppers or mushrooms for extra flavor and texture.
