Description

Crispy Seafood Egg Rolls are a delicious appetizer filled with shrimp, imitation crab, and fresh vegetables, perfect for any occasion.


Ingredients

  • 1 cup cooked shrimp, chopped
  • 1 cup imitation crab meat, shredded
  • 1 cup coleslaw mix (cabbage and carrots)
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 package spring roll wrappers (about 20 wrappers)
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine the chopped shrimp, imitation crab meat, coleslaw mix, green onions, garlic, ginger, soy sauce, and sesame oil. Mix well until all ingredients are evenly combined.
  2. Lay a spring roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the seafood mixture in the center of the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a little water on the edges to help seal the wrapper.
  4. Repeat with the remaining wrappers and filling.
  5. In a large skillet or deep fryer, heat about 2 inches of vegetable oil over medium heat until hot (about 350°F).
  6. Carefully add a few egg rolls at a time, frying until golden brown and crispy, about 3-4 minutes per side.
  7. Remove and drain on paper towels.
  8. Serve hot with sweet chili sauce or soy sauce for dipping.

Notes

  • For a spicier kick, add a teaspoon of sriracha or red pepper flakes to the seafood mixture.
