Ingredients

  • 3 medium potatoes, peeled and sliced into thick rounds
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • Vegetable oil, for frying
  • 1 lb beef sirloin or flank steak, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • ½ tsp black pepper
  • 1 tbsp vegetable oil
  • ½ red bell pepper, sliced
  • ½ green bell pepper, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 green chili, sliced (optional)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce (optional)
  • ½ tsp sugar
  • ¼ cup beef broth or water
  • 1 tsp cornstarch mixed with 1 tbsp water (slurry)

Instructions

  1. Boil sliced potatoes in salted water for 5 minutes.
  2. Drain and pat dry.
  3. Heat vegetable oil in a pan over medium-high heat.
  4. Fry potato slices until golden and crispy (4–5 minutes per side).
  5. Drain on paper towels. Season with salt, pepper, and garlic powder.
  6. In a bowl, mix beef with soy sauce, cornstarch, and black pepper.
  7. Heat 1 tbsp oil in a pan on high heat.
  8. Sear beef for 2–3 minutes until browned. Remove and set aside.
  9. In the same pan, sauté garlic, onion, and green chili for 1–2 minutes.
  10. Add bell peppers, stir-fry for 2 more minutes.
  11. Combine soy sauce, oyster sauce, hoisin (if using), sugar, and broth in a bowl.
  12. Pour into pan and stir in the cornstarch slurry.
  13. Return beef to pan and toss to coat. Cook 1–2 minutes until glossy.
  14. Plate crispy potatoes beside the saucy beef stir-fry. Enjoy hot!

Notes

  • Adjust the spice level by adding or omitting the green chili.
  • For extra flavor, marinate the beef for 30 minutes before cooking.
