- 1 cup chickpea flour (besan)
- 1/2 teaspoon baking powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon salt (or to taste)
- 1/2 cup water (adjust as needed)
- 1 cup mixed vegetables (such as spinach, potatoes, and onions), chopped
- Oil for frying
- 1 cup plain yogurt
- 2 tablespoons tamarind paste
- 1 tablespoon honey or sugar (adjust to taste)
- 1/4 teaspoon salt
- 1/4 teaspoon cumin powder
Instructions
- In a large mixing bowl, combine chickpea flour, baking powder, turmeric, cumin, coriander, red chili powder, and salt. Mix well.
- Gradually add water to the dry ingredients, stirring until you achieve a smooth, thick batter. It should coat the back of a spoon.
- Fold in the chopped mixed vegetables until they are well coated with the batter.
- Heat oil in a deep frying pan over medium heat. To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
- Carefully drop spoonfuls of the batter-coated vegetables into the hot oil, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side.
- Remove the fritters with a slotted spoon and drain on paper towels to remove excess oil.
- For the tamarind yogurt dip, in a small bowl, mix together yogurt, tamarind paste, honey (or sugar), salt, and cumin powder until smooth.
- Serve the crispy fritters hot with the tamarind yogurt dip on the side.
Notes
- For a spicier kick, add chopped green chilies to the batter.
- Try using different vegetables like cauliflower or zucchini for variety.
