Description

Crispy Fritters with Tamarind Yogurt Dip (Pakoras) are a delightful snack that combines a variety of vegetables in a spiced chickpea flour batter, served with a tangy tamarind yogurt dip.


Ingredients

  • 1 cup chickpea flour (besan)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 cup water (adjust as needed)
  • 1 cup mixed vegetables (such as spinach, potatoes, and onions), chopped
  • Oil for frying
  • 1 cup plain yogurt
  • 2 tablespoons tamarind paste
  • 1 tablespoon honey or sugar (adjust to taste)
  • 1/4 teaspoon salt
  • 1/4 teaspoon cumin powder

Instructions

  1. In a large mixing bowl, combine chickpea flour, baking powder, turmeric, cumin, coriander, red chili powder, and salt. Mix well.
  2. Gradually add water to the dry ingredients, stirring until you achieve a smooth, thick batter. It should coat the back of a spoon.
  3. Fold in the chopped mixed vegetables until they are well coated with the batter.
  4. Heat oil in a deep frying pan over medium heat. To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
  5. Carefully drop spoonfuls of the batter-coated vegetables into the hot oil, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side.
  6. Remove the fritters with a slotted spoon and drain on paper towels to remove excess oil.
  7. For the tamarind yogurt dip, in a small bowl, mix together yogurt, tamarind paste, honey (or sugar), salt, and cumin powder until smooth.
  8. Serve the crispy fritters hot with the tamarind yogurt dip on the side.

Notes

  • For a spicier kick, add chopped green chilies to the batter.
  • Try using different vegetables like cauliflower or zucchini for variety.
