Ingredients

  • 1 cup dried chickpeas (soaked overnight)
  • 1 small onion, roughly chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Oil for frying
  • For the Beetroot Tahini Sauce:
  • 1/2 cup tahini
  • 1 small cooked beetroot, peeled and chopped
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/4 cup water (adjust for desired consistency)
  • Salt to taste

Instructions

  1. In a food processor, combine soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, black pepper, and cayenne pepper. Pulse until the mixture is coarsely blended but not pureed.
  2. Transfer the mixture to a bowl and refrigerate for at least 30 minutes.
  3. While the falafel mixture chills, prepare the beetroot tahini sauce. In a blender, combine tahini, cooked beetroot, lemon juice, garlic, and water. Blend until smooth, adding more water if needed to reach your desired consistency. Season with salt to taste.
  4. Heat oil in a deep skillet or pot over medium heat.
  5. Form the falafel mixture into small balls or patties, about 1.5 inches in diameter.
  6. Fry in batches for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
  7. Serve the crispy falafel warm with the beetroot tahini sauce drizzled on top or on the side for dipping.

Notes

  • For a lighter version, bake the falafel at 375°F for 20-25 minutes, flipping halfway through.
  • For added flavor, mix in spices like smoked paprika or add a pinch of cinnamon to the falafel mixture.
