- 1 cup dried chickpeas (soaked overnight)
- 1 small onion, roughly chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- Oil for frying
- For the Beetroot Tahini Sauce:
- 1/2 cup tahini
- 1 small cooked beetroot, peeled and chopped
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/4 cup water (adjust for desired consistency)
- Salt to taste
Instructions
- In a food processor, combine soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, black pepper, and cayenne pepper. Pulse until the mixture is coarsely blended but not pureed.
- Transfer the mixture to a bowl and refrigerate for at least 30 minutes.
- While the falafel mixture chills, prepare the beetroot tahini sauce. In a blender, combine tahini, cooked beetroot, lemon juice, garlic, and water. Blend until smooth, adding more water if needed to reach your desired consistency. Season with salt to taste.
- Heat oil in a deep skillet or pot over medium heat.
- Form the falafel mixture into small balls or patties, about 1.5 inches in diameter.
- Fry in batches for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
- Serve the crispy falafel warm with the beetroot tahini sauce drizzled on top or on the side for dipping.
Notes
- For a lighter version, bake the falafel at 375°F for 20-25 minutes, flipping halfway through.
- For added flavor, mix in spices like smoked paprika or add a pinch of cinnamon to the falafel mixture.
