  • 1 cup all-purpose flour
  • 2 large eggs, beaten

  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/4 cup honey

Instructions

  1. Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.
  2. Sprinkle the eggplant slices with salt and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry with paper towels.
  3. Set up a breading station: place the flour in one shallow dish, the beaten eggs in another, and mix the breadcrumbs, garlic powder, paprika, and black pepper in a third dish.
  4. Dip each eggplant slice first into the flour, shaking off excess, then into the beaten eggs, and finally coat with the breadcrumb mixture.
  5. Arrange the breaded eggplant slices in a single layer on the prepared baking sheets. Drizzle olive oil over the top of the chips.
  6. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
