- 2 medium eggplants, sliced into 1/8-inch rounds
- 1 teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably panko)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 1/4 cup honey
Instructions
- Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.
- Sprinkle the eggplant slices with salt and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry with paper towels.
- Set up a breading station: place the flour in one shallow dish, the beaten eggs in another, and mix the breadcrumbs, garlic powder, paprika, and black pepper in a third dish.
- Dip each eggplant slice first into the flour, shaking off excess, then into the beaten eggs, and finally coat with the breadcrumb mixture.
- Arrange the breaded eggplant slices in a single layer on the prepared baking sheets. Drizzle olive oil over the top of the chips.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the oven and drizzle with honey while still warm. Serve immediately.
