  • 1/4 cup cotton candy, chopped

  • 1/2 cup mini chocolate chips
  • 1 cup crispy rice cereal
  • 1/2 cup white chocolate chips
  • 1 tablespoon coconut oil
  • Extra cotton candy for garnish

Instructions

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  2. Fold in the chopped cotton candy until evenly distributed.
  3. Using a cookie scoop or your hands, form the cream cheese mixture into small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.
  4. Freeze the cheesecake balls for at least 1 hour until firm.
  5. In a microwave-safe bowl, melt the white chocolate chips and coconut oil together in 30-second intervals, stirring until smooth.
  6. In a separate bowl, combine the graham cracker crumbs and crispy rice cereal.
  7. Dip each frozen cheesecake ball into the melted white chocolate, allowing excess to drip off, then roll in the graham cracker and crispy rice mixture until fully coated.
  8. Return the coated cheesecake bombs to the parchment-lined baking sheet.
  9. Once all are coated, place them back in the freezer for 30 minutes to set.
