- 1 block firm tofu, pressed and drained
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 1/2 cup plant-based milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- Lime wedges for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the pressed tofu into small cubes.
- In a bowl, mix the flour, garlic powder, onion powder, paprika, salt, and black pepper.
- Dip each tofu cube into the flour mixture, then into the plant-based milk, and finally coat with shredded coconut and panko breadcrumbs.
- Place the coated tofu cubes on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
- Warm the corn tortillas in a skillet or microwave.
- Assemble the tacos by placing crispy tofu in each tortilla and topping with lettuce, tomatoes, cilantro, and avocado.
- Serve with lime wedges on the side.
Notes
- For extra flavor, marinate the tofu in soy sauce before coating.
- Feel free to add your favorite taco toppings like salsa or vegan sour cream.
