Crispy Coconut Tofu Tacos are a delicious and flavorful vegan dish that combines crispy tofu with fresh toppings in a soft taco shell.


Ingredients

  • 1 block firm tofu, pressed and drained
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1/2 cup plant-based milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the pressed tofu into small cubes.
  3. In a bowl, mix the flour, garlic powder, onion powder, paprika, salt, and black pepper.
  4. Dip each tofu cube into the flour mixture, then into the plant-based milk, and finally coat with shredded coconut and panko breadcrumbs.
  5. Place the coated tofu cubes on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  7. Warm the corn tortillas in a skillet or microwave.
  8. Assemble the tacos by placing crispy tofu in each tortilla and topping with lettuce, tomatoes, cilantro, and avocado.
  9. Serve with lime wedges on the side.

  • For extra flavor, marinate the tofu in soy sauce before coating.
