Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large kale leaves, stems removed
  • 1 ripe avocado
  • 2 tablespoons lime juice
  • 1 tablespoon Greek yogurt
  • 1 teaspoon sriracha (adjust to taste)
  • 4 whole wheat tortillas
  • 1 cup shredded carrots
  • 1/2 cup diced cucumber
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 400°F.
  2. In a bowl, toss the chickpeas with olive oil, smoked paprika, garlic powder, salt, and black pepper.
  3. Spread the chickpeas on a baking sheet in a single layer and roast for 25-30 minutes, or until crispy, shaking the pan halfway through.
  4. While the chickpeas are roasting, prepare the spicy avocado dressing by blending the avocado, lime juice, Greek yogurt, and sriracha until smooth and creamy.
  5. To assemble the wraps, lay a tortilla flat and place a kale leaf on top.
  6. Add a layer of shredded carrots, diced cucumber, and crispy chickpeas.
  7. Drizzle with the spicy avocado dressing and sprinkle with chopped cilantro.
  8. Roll the tortilla tightly around the filling, folding in the sides as you go.
  9. Cut the wraps in half and serve immediately, or wrap them in foil or parchment paper to keep them fresh if not serving right away.
