A delicious and easy recipe for crispy chicken served with sautéed zucchini and shallots.

- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 2 tablespoons olive oil
- 2 medium zucchinis, sliced into half-moons
- 2 shallots, thinly sliced
- 1 tablespoon fresh lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, mix together the flour, salt, pepper, garlic powder, and paprika.
- In another shallow dish, beat the eggs.
- In a third shallow dish, place the breadcrumbs.
- Slice each chicken breast in half horizontally to create thinner cutlets. Dredge each cutlet in the flour mixture, shaking off the excess, then dip into the beaten eggs, and finally coat with breadcrumbs.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the breaded chicken cutlets and cook for about 3-4 minutes on each side, until golden brown and crispy. Transfer the chicken to the prepared baking sheet.
- In the same skillet, add the sliced zucchini and shallots. Sauté for about 5 minutes until they are tender and slightly caramelized.
- Spread the sautéed zucchini and shallots around the chicken on the baking sheet. Drizzle with lemon juice.
- Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
- Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the flour mixture.
- You can substitute chicken with turkey cutlets or use eggplant slices for a vegetarian option.
