Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the heavy cream until the dough is smooth and chill in the refrigerator for about 30 minutes.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart, and flatten each cookie slightly.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  10. Once cooled, sprinkle about 1 teaspoon of granulated sugar on top of each cookie and caramelize using a kitchen torch or under a broiler.
  11. Serve immediately or store in an airtight container for up to 3 days.
