- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup heavy cream
- 1/4 cup granulated sugar (for topping)
Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the heavy cream until the dough is smooth and chill in the refrigerator for about 30 minutes.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart, and flatten each cookie slightly.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Once cooled, sprinkle about 1 teaspoon of granulated sugar on top of each cookie and caramelize using a kitchen torch or under a broiler.
- Serve immediately or store in an airtight container for up to 3 days.
Notes
- For a chocolate twist, add 1/2 cup of mini chocolate chips to the dough.
- Substitute heavy cream with coconut cream for a dairy-free version.
