Ingredients

- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 4 cups vegetable broth
- 2 (15-ounce) cans white beans (such as cannellini or great northern), drained and rinsed
- 1 cup diced tomatoes (canned or fresh)
- 1 cup kale, chopped
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until translucent.
- Stir in the minced garlic, diced carrots, and celery. Cook for an additional 5 minutes, stirring occasionally.
- Add the dried thyme, oregano, and red pepper flakes (if using) to the pot. Stir well to combine.
- Pour in the vegetable broth and add the white beans and diced tomatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Add the chopped kale and heavy cream to the pot. Stir to combine and let it simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- For a lighter version, substitute the heavy cream with coconut milk or unsweetened almond milk.
- Add cooked sausage or chicken for extra protein and flavor.
