Ingredients

  • 2 cups cauliflower orzo (or regular orzo if not strictly keto)
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
  3. Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
  4. Reduce the heat to low and pour in the heavy cream. Stir in the Parmesan cheese and Italian seasoning. Allow the sauce to simmer for 2-3 minutes until it thickens slightly.
  5. Add the cooked chicken back into the skillet and stir to combine. Gently fold in the cauliflower orzo and mix until everything is well coated in the creamy sauce.
  6. Taste and adjust seasoning with more salt and pepper if needed. Garnish with fresh basil leaves before serving.
