- 2 cups cauliflower orzo (or regular orzo if not strictly keto)
- 1 pound boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh basil for garnish (optional)
Instructions
- Cook the cauliflower orzo according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season the chicken thighs with garlic powder, onion powder, salt, and pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let rest for a few minutes before slicing.
- In the same skillet, lower the heat to medium and add the heavy cream, stirring to combine with the drippings. Add the chopped spinach, sun-dried tomatoes, Parmesan cheese, and Italian seasoning. Cook for 3-4 minutes until the spinach wilts and the sauce thickens slightly.
- Add the cooked cauliflower orzo to the skillet and stir until well combined. Slice the chicken and place it on top of the orzo mixture.
- Garnish with fresh basil if desired and serve warm.
Notes
- For added flavor, marinate the chicken in Italian dressing for 30 minutes before cooking.
- Substitute the spinach with kale or arugula for a different green option.
- Serve with pork rinds or cucumber slices for a crunchy side.
