Ingredients

  • 2 cups cauliflower orzo (or regular orzo if not strictly keto)
  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the cauliflower orzo according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season the chicken thighs with garlic powder, onion powder, salt, and pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let rest for a few minutes before slicing.
  3. In the same skillet, lower the heat to medium and add the heavy cream, stirring to combine with the drippings. Add the chopped spinach, sun-dried tomatoes, Parmesan cheese, and Italian seasoning. Cook for 3-4 minutes until the spinach wilts and the sauce thickens slightly.
  4. Add the cooked cauliflower orzo to the skillet and stir until well combined. Slice the chicken and place it on top of the orzo mixture.
  5. Garnish with fresh basil if desired and serve warm.

  • For added flavor, marinate the chicken in Italian dressing for 30 minutes before cooking.
