  • 1 can (14.5 ounces) diced tomatoes, including juices
  • 4 cups vegetable stock
  • 1 cup dried red lentils, thoroughly rinsed
  • 1 cup creamy coconut milk
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for decoration (optional)

Instructions

  1. Warm the olive oil in a large saucepan over medium heat.
  2. Add the chopped onion and sauté for about 4-5 minutes until soft and translucent.
  3. Incorporate the minced garlic, diced carrot, and chopped celery, cooking for an additional 5 minutes while stirring frequently.
  4. Sprinkle in the dried basil, oregano, and optional red pepper flakes, mixing well to release their flavors.
  5. Introduce the diced tomatoes along with their juices and pour in the vegetable stock. Bring to a vigorous boil.
  6. Add the rinsed lentils to the pot, lower the heat, and let the soup simmer uncovered for approximately 20-25 minutes, or until the lentils are soft.
  7. Stir in the creamy coconut milk and season with salt and pepper to taste. Let it warm through for another 5 minutes.
  8. For a smoother consistency, blend the soup using an immersion blender or transfer it to a standard blender in batches.
  9. Ladle the soup into bowls and top with fresh basil leaves if desired.
