- 1 can (14.5 ounces) diced tomatoes, including juices
- 4 cups vegetable stock
- 1 cup dried red lentils, thoroughly rinsed
- 1 cup creamy coconut milk
- Salt and freshly ground black pepper to taste
- Fresh basil leaves for decoration (optional)
Instructions
- Warm the olive oil in a large saucepan over medium heat.
- Add the chopped onion and sauté for about 4-5 minutes until soft and translucent.
- Incorporate the minced garlic, diced carrot, and chopped celery, cooking for an additional 5 minutes while stirring frequently.
- Sprinkle in the dried basil, oregano, and optional red pepper flakes, mixing well to release their flavors.
- Introduce the diced tomatoes along with their juices and pour in the vegetable stock. Bring to a vigorous boil.
- Add the rinsed lentils to the pot, lower the heat, and let the soup simmer uncovered for approximately 20-25 minutes, or until the lentils are soft.
- Stir in the creamy coconut milk and season with salt and pepper to taste. Let it warm through for another 5 minutes.
- For a smoother consistency, blend the soup using an immersion blender or transfer it to a standard blender in batches.
- Ladle the soup into bowls and top with fresh basil leaves if desired.
