A delicious and comforting creamy tomato bisque served with crispy grilled cheese croutons.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 4 slices of bread
  • 4 slices of cheese (cheddar or your choice)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and cook for another minute.
  3. Stir in crushed tomatoes, vegetable broth, and dried basil. Bring to a simmer.
  4. Reduce heat and let it simmer for 20 minutes.
  5. Stir in heavy cream and season with salt and pepper. Blend until smooth.
  6. For the croutons, grill the bread with cheese until golden and melted, then cut into cubes.
  7. Serve the bisque hot, topped with grilled cheese croutons.

Notes

  • For a vegan version, substitute heavy cream with coconut cream and use vegan cheese.
  • Feel free to add fresh herbs for extra flavor.
