- 2 cups cooked shrimp, chopped
- 1 cup sour cream
- 1 cup Monterey Jack cheese, shredded
- 1/2 cup diced green chiles
- 1/2 cup diced onion
- 1 clove garlic, minced
- 8 medium corn tortillas
- 1 cup enchilada sauce
- 1 tablespoon olive oil
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh cilantro, for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, add olive oil and sauté diced onion and garlic until softened.
- Stir in the chopped shrimp, green chiles, cumin, salt, and black pepper. Cook for 5 minutes.
- Remove skillet from heat and mix in sour cream and half of the Monterey Jack cheese.
- To assemble, warm the corn tortillas for flexibility. Fill each tortilla with the shrimp mixture and roll tightly.
- Place the rolled enchiladas in a greased baking dish.
- Pour enchilada sauce over the top and sprinkle remaining Monterey Jack cheese.
- Bake in the preheated oven for 20-25 minutes until the cheese is melty and bubbly.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier version, add more diced green chiles or a dash of hot sauce.
- Use flour tortillas if preferred over corn tortillas.
- Serve with a side of Mexican rice or a fresh salad for a complete meal.
