Description

Creamy Shrimp Enchiladas are a delightful dinner option featuring succulent shrimp, creamy Monterey Jack cheese sauce, and a hint of spice, all wrapped in soft corn tortillas.


Ingredients

  • 2 cups cooked shrimp, chopped
  • 1 cup sour cream
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 cup diced green chiles
  • 1/2 cup diced onion
  • 1 clove garlic, minced
  • 8 medium corn tortillas
  • 1 cup enchilada sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and sauté diced onion and garlic until softened.
  3. Stir in the chopped shrimp, green chiles, cumin, salt, and black pepper. Cook for 5 minutes.
  4. Remove skillet from heat and mix in sour cream and half of the Monterey Jack cheese.
  5. To assemble, warm the corn tortillas for flexibility. Fill each tortilla with the shrimp mixture and roll tightly.
  6. Place the rolled enchiladas in a greased baking dish.
  7. Pour enchilada sauce over the top and sprinkle remaining Monterey Jack cheese.
  8. Bake in the preheated oven for 20-25 minutes until the cheese is melty and bubbly.
  9. Garnish with fresh cilantro before serving.

Notes

  • For a spicier version, add more diced green chiles or a dash of hot sauce.
  • Use flour tortillas if preferred over corn tortillas.
