  • 8 ounces jumbo pasta shells
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crab meat, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.
  2. In a large mixing bowl, combine the ricotta cheese, 1/2 cup of the mozzarella cheese, cooked shrimp, cooked crab meat, Parmesan cheese, heavy cream, garlic, oregano, basil, salt, and pepper. Mix until well combined.
  3. Stuff each cooked pasta shell with the seafood mixture, using a spoon to fill them generously.
  4. In a baking dish, drizzle olive oil to coat the bottom. Arrange the stuffed shells in the dish, seam side up.
  5. Sprinkle the remaining mozzarella cheese over the top of the stuffed shells.
  6. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  7. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.

Notes

  • For added flavor, consider mixing in some chopped spinach or artichokes into the seafood filling.
  • If you prefer a spicier kick, add a pinch of red pepper flakes to the filling mixture.
  • Serve with pork rinds or cucumber slices for a crunchy side option.
