Ingredients

  • 2 cups cherry tomatoes
  • 1 cup ricotta cheese
  • 4 oz prosciutto
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes.
  3. While the tomatoes are roasting, cook the pasta according to package instructions.
  4. In a skillet, cook the prosciutto until crispy, then remove and set aside.
  5. In a large bowl, combine the cooked pasta, roasted tomatoes, and ricotta cheese. Mix well.
  6. Serve the pasta topped with crispy prosciutto and fresh basil.
