- 8 oz pasta of choice
- 2 cups cherry tomatoes
- 1 cup ricotta cheese
- 4 oz prosciutto
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Spread cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes.
- While the tomatoes are roasting, cook the pasta according to package instructions.
- In a skillet, cook the prosciutto until crispy, then remove and set aside.
- In a large bowl, combine the cooked pasta, roasted tomatoes, and ricotta cheese. Mix well.
- Serve the pasta topped with crispy prosciutto and fresh basil.
Notes
- Feel free to use any pasta shape you prefer.
- For a vegetarian option, omit the prosciutto.
