- 2 cups Arborio rice
- 4 cups vegetable broth
- 1 cup wild mushrooms (such as shiitake, oyster, or chanterelles), cleaned and sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon truffle oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a medium saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
- Add the sliced wild mushrooms to the skillet and sauté until they are tender and browned, about 5-7 minutes. Season with salt and pepper to taste.
- Stir in the Arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
- Once the rice is cooked, reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Mix until creamy and well combined.
- Drizzle the truffle oil over the rice and stir gently to incorporate. Adjust seasoning with additional salt and pepper if needed.
- Serve immediately, garnished with fresh parsley.

- For a vegetarian option, substitute the vegetable broth with a homemade mushroom broth for added flavor.
