  • 4 cups vegetable broth
  • 1 cup wild mushrooms (such as shiitake, oyster, or chanterelles), cleaned and sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon truffle oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
  3. Add the sliced wild mushrooms to the skillet and sauté until they are tender and browned, about 5-7 minutes. Season with salt and pepper to taste.
  4. Stir in the Arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly.
  5. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
  6. Once the rice is cooked, reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Mix until creamy and well combined.
  7. Drizzle the truffle oil over the rice and stir gently to incorporate. Adjust seasoning with additional salt and pepper if needed.
  8. Serve immediately, garnished with fresh parsley.
