Creamy Mango Passionfruit Bars are a refreshing dessert that combines the tropical flavors of mango and passionfruit in a creamy filling over a buttery crust.

- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup fresh mango puree (about 2 ripe mangoes)
- 1/2 cup passionfruit juice (fresh or bottled)
- 1/2 cup sweetened condensed milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
- In a medium bowl, combine the flour, sugar, and salt. Pour in the melted butter and mix until crumbly.
- Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
- In a separate bowl, whisk together the mango puree, passionfruit juice, sweetened condensed milk, eggs, vanilla extract, and cornstarch until smooth.
- Pour this mixture over the crust in the baking dish.
- Bake for 25-30 minutes, or until the filling is set and the edges are lightly golden.
- Remove from the oven and let cool at room temperature for about 1 hour.
- Once cooled, refrigerate for at least 2 hours before cutting into bars.
- Serve chilled and enjoy!
Notes
- For a tropical twist, try adding shredded coconut to the crust or topping the bars with fresh fruit slices before serving.
- If you prefer a sweeter treat, increase the sugar in the filling by 2 tablespoons.
