- 1/4 cup unsweetened shredded coconut
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup almond butter
- 1/4 cup chopped almonds
- 1 tablespoon erythritol or your preferred keto sweetener (optional)
- Pinch of salt
Instructions
- In a medium bowl, combine the almond milk, chia seeds, shredded coconut, vanilla extract, ground cinnamon, almond butter, erythritol (if using), and salt. Stir well until all ingredients are fully mixed.
- Divide the mixture evenly into two jars or containers with lids.
- Seal the jars and refrigerate overnight (or for at least 4 hours) to allow the chia seeds to absorb the liquid and thicken the mixture.
- Before serving, stir the oats well. Top with chopped almonds for added crunch and flavor.
