Ingredients

  • 1/4 cup chia seeds
  • 1/4 cup unsweetened shredded coconut
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup almond butter
  • 1/4 cup chopped almonds
  • 1 tablespoon erythritol or your preferred keto sweetener (optional)
  • Pinch of salt

Instructions

  1. In a medium bowl, combine the almond milk, chia seeds, shredded coconut, vanilla extract, ground cinnamon, almond butter, erythritol (if using), and salt. Stir well until all ingredients are fully mixed.
  2. Divide the mixture evenly into two jars or containers with lids.
  3. Seal the jars and refrigerate overnight (or for at least 4 hours) to allow the chia seeds to absorb the liquid and thicken the mixture.
  4. Before serving, stir the oats well. Top with chopped almonds for added crunch and flavor.
