Ingredients

- 2 cups cauliflower orzo (available in stores or homemade)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and browned, about 5-7 minutes.
- Stir in the cauliflower orzo and cook for another 2-3 minutes, allowing it to absorb some flavors.
- Pour in the heavy cream and add the Italian seasoning. Stir well and let it simmer for about 5 minutes until the mixture thickens slightly.
- Add the fresh spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
- Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh parsley.
Notes
- For a crunch, serve with pork rinds or cucumber slices on the side.
- You can also substitute the spinach with kale or add cooked chicken for extra protein.
