Ingredients

  • 2 cups cauliflower orzo (available in stores or homemade)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and browned, about 5-7 minutes.
  3. Stir in the cauliflower orzo and cook for another 2-3 minutes, allowing it to absorb some flavors.
  4. Pour in the heavy cream and add the Italian seasoning. Stir well and let it simmer for about 5 minutes until the mixture thickens slightly.
  5. Add the fresh spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
  6. Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a crunch, serve with pork rinds or cucumber slices on the side.
  • You can also substitute the spinach with kale or add cooked chicken for extra protein.
