- 1 cup unsweetened almond milk
- 1/4 cup chia seeds
- 1/4 cup unsweetened shredded coconut
- 1/4 cup almond flour
- 2 large eggs
- 1/4 cup erythritol or your preferred keto sweetener
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- In a medium saucepan, combine the almond milk, chia seeds, shredded coconut, almond flour, erythritol, vanilla extract, cinnamon, and salt. Stir well to combine.
- Heat the mixture over medium heat, stirring frequently until it begins to thicken, about 5-7 minutes.
- In a separate bowl, whisk the eggs until well beaten. Slowly add a few tablespoons of the hot mixture to the eggs while whisking to temper them, then gradually whisk the egg mixture back into the saucepan.
- Continue to cook for another 2-3 minutes, stirring constantly until the custard is thick and creamy.
- Remove from heat and let it cool for a few minutes. Serve warm or chilled, garnished with additional cinnamon or a sprinkle of shredded coconut if desired.
Notes
- For added flavor, mix in a tablespoon of unsweetened cocoa powder for a chocolate version or a few drops of almond extract for a nutty twist.
