  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine the almond milk, chia seeds, shredded coconut, almond flour, erythritol, vanilla extract, cinnamon, and salt. Stir well to combine.
  2. Heat the mixture over medium heat, stirring frequently until it begins to thicken, about 5-7 minutes.
  3. In a separate bowl, whisk the eggs until well beaten. Slowly add a few tablespoons of the hot mixture to the eggs while whisking to temper them, then gradually whisk the egg mixture back into the saucepan.
  4. Continue to cook for another 2-3 minutes, stirring constantly until the custard is thick and creamy.
  5. Remove from heat and let it cool for a few minutes. Serve warm or chilled, garnished with additional cinnamon or a sprinkle of shredded coconut if desired.
