Ingredients

- 8 ounces fresh mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and sliced mushrooms. Cook for another 5-7 minutes, until the mushrooms are tender and have released their moisture.
- Pour in the vegetable broth and add the dried thyme, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
- Using an immersion blender, puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
- Return the soup to the pot (if using a regular blender) and stir in the heavy cream. Heat over low heat until warmed through, about 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Add a splash of sherry or white wine during the cooking process for extra depth of flavor.
