Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 package (16 oz) gnocchi
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the diced carrots, celery, onion, and minced garlic.
  3. Pour in the chicken broth and sprinkle with Italian seasoning.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once the chicken is cooked, shred it with two forks and return it to the crockpot.
  6. Add the heavy cream and gnocchi, stirring to combine.
  7. Cook on high for an additional 30 minutes, or until the gnocchi is tender.
  8. Season with salt and pepper to taste before serving.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • Feel free to add spinach or kale for extra greens.
  • This soup can be frozen, but the gnocchi may become mushy upon reheating.
