- 1 lb boneless, skinless chicken breasts
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1 package (16 oz) gnocchi
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crockpot.
- Add the diced carrots, celery, onion, and minced garlic.
- Pour in the chicken broth and sprinkle with Italian seasoning.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once the chicken is cooked, shred it with two forks and return it to the crockpot.
- Add the heavy cream and gnocchi, stirring to combine.
- Cook on high for an additional 30 minutes, or until the gnocchi is tender.
- Season with salt and pepper to taste before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Feel free to add spinach or kale for extra greens.
- This soup can be frozen, but the gnocchi may become mushy upon reheating.
