Description

A delicious and hearty chowder made with sweet corn, fresh zucchini, and crispy bacon, perfect for any occasion.


Ingredients

  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 medium zucchinis, diced
  • 3 cups of corn (fresh or frozen)
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the diced onion to the pot and sauté until translucent.
  3. Add the diced zucchini and corn, stirring to combine.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Serve hot, garnished with crispy bacon and fresh parsley.

Notes

  • For a vegetarian version, omit the bacon and use vegetable broth.
  • This chowder can be made ahead of time and reheated.
  • Feel free to add other vegetables like bell peppers or carrots for extra flavor.
