Ingredients

- 4 ears of corn, grilled and kernels removed
- 4 slices of bacon, chopped
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 2 medium potatoes, diced
- 4 cups of chicken broth
- 1 cup of heavy cream
- Salt and pepper to taste
- Fresh chives for garnish
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add the diced onion and garlic, sautéing until translucent.
- Add the diced potatoes and chicken broth, bringing to a boil. Reduce heat and simmer until potatoes are tender.
- Stir in the grilled corn and heavy cream, cooking until heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with crispy bacon and fresh chives.
Notes
- For a vegetarian version, omit the bacon and use vegetable broth.
- Feel free to add other vegetables like bell peppers or carrots for extra flavor.
