Description

A delicious and hearty chowder made with grilled corn and crispy bacon, perfect for a comforting meal.


Ingredients

  • 4 ears of corn, grilled and kernels removed
  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 2 medium potatoes, diced
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the diced onion and garlic, sautéing until translucent.
  3. Add the diced potatoes and chicken broth, bringing to a boil. Reduce heat and simmer until potatoes are tender.
  4. Stir in the grilled corn and heavy cream, cooking until heated through.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with crispy bacon and fresh chives.

Notes

  • For a vegetarian version, omit the bacon and use vegetable broth.
