- 1/2 teaspoon cinnamon powder
- 1/4 cup unsweetened shredded coconut
- Assorted fresh fruits for garnish (like mango, banana, or mixed berries)
Instructions
- Rinse the amaranth thoroughly under cold water using a fine-mesh sieve.
- In a medium-sized pot, combine the rinsed amaranth with coconut milk, water, honey (or maple syrup), vanilla essence, sea salt, and cinnamon powder.
- Mix everything together until well incorporated.
- Place the pot over medium-high heat and bring the mixture to a vigorous boil.
- Once boiling, lower the heat to a gentle simmer, cover the pot, and let it cook for about 20-25 minutes, stirring occasionally.
- After cooking, remove the pot from the heat and allow it to rest, still covered, for an additional 5 minutes.
- Stir in the shredded coconut, ensuring it’s evenly distributed.
- If the pudding is too thick, stir in a splash more of coconut milk.
- Serve the pudding warm or chilled in individual bowls, garnished with fresh fruits.
