A delicious and creamy chicken molokhia served with flavorful garlic rice, perfect for a comforting meal.
Ingredients

- 2 cups molokhia leaves (fresh or frozen, chopped)
- 1 lb boneless, skinless chicken thighs
- 4 cups chicken broth
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- 1 cup heavy cream
- 1 tablespoon lemon juice
- 2 cups long-grain white rice
- 4 cups water
- 2 tablespoons butter
- 1 teaspoon garlic powder
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute until fragrant.
- Add the chicken thighs to the pot and season with cumin, coriander, salt, and pepper. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 25-30 minutes, or until the chicken is fully cooked.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Stir in the molokhia leaves and cook for another 5 minutes. Add the heavy cream and lemon juice, stirring to combine. Simmer for an additional 5 minutes until the mixture is creamy and heated through.
- While the molokhia is cooking, rinse the rice under cold water until the water runs clear. In a separate pot, bring 4 cups of water to a boil. Add the rice, butter, garlic powder, and a pinch of salt. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
- Fluff the rice with a fork and serve alongside the creamy chicken molokhia. Garnish with fresh parsley.
Notes
- For a vegetarian version, substitute chicken with chickpeas and use vegetable broth.
- Add a pinch of red pepper flakes for a spicy kick.
