Ingredients

  • 2 cups molokhia leaves (fresh or frozen, chopped)
  • 1 lb boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 tablespoon lemon juice
  • 2 cups long-grain white rice
  • 4 cups water
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute until fragrant.
  2. Add the chicken thighs to the pot and season with cumin, coriander, salt, and pepper. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 25-30 minutes, or until the chicken is fully cooked.
  3. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  4. Stir in the molokhia leaves and cook for another 5 minutes. Add the heavy cream and lemon juice, stirring to combine. Simmer for an additional 5 minutes until the mixture is creamy and heated through.
  5. While the molokhia is cooking, rinse the rice under cold water until the water runs clear. In a separate pot, bring 4 cups of water to a boil. Add the rice, butter, garlic powder, and a pinch of salt. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
  6. Fluff the rice with a fork and serve alongside the creamy chicken molokhia. Garnish with fresh parsley.

Notes

  • For a vegetarian version, substitute chicken with chickpeas and use vegetable broth.
  • Add a pinch of red pepper flakes for a spicy kick.
