Description

Creamy Chicken Butternut Soup is a delightful treat that combines the sweetness of butternut squash with tender chicken in a creamy base.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium butternut squash, peeled and cubed (about 4 cups)
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 cups cooked chicken, shredded
  • 1 cup coconut milk or heavy cream
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.
  2. Stir in the cubed butternut squash, chicken broth, thyme, cumin, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the squash is tender.
  3. Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a blender and blend until smooth.
  4. Return the pureed soup to the pot over low heat. Stir in the shredded chicken and coconut milk or heavy cream. Heat through for about 5 minutes, stirring occasionally.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

  • For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce while cooking.
  • To make it vegetarian, substitute the chicken with chickpeas and use vegetable broth instead of chicken broth.
