- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium butternut squash, peeled and cubed (about 4 cups)
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 cups cooked chicken, shredded
- 1 cup coconut milk or heavy cream
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the cubed butternut squash, chicken broth, thyme, cumin, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the squash is tender.
- Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a blender and blend until smooth.
- Return the pureed soup to the pot over low heat. Stir in the shredded chicken and coconut milk or heavy cream. Heat through for about 5 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
- For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce while cooking.
- To make it vegetarian, substitute the chicken with chickpeas and use vegetable broth instead of chicken broth.
